My Dad's Favorite: Lemon Meringue Pie

My dad grew up in Anderson, and he still has fond memories of going to the Post Office Café and having pie the way it should be served—a great big slab on a plate.

Once in a while we indulged him with a quarter of a pie, particularly on his birthday, when his “cake” of choice was Lemon Meringue Pie.

Alas, to the dismay of my family of pie lovers, the Post Office Café is long gone. But even though they never got to experience the real thing, they have no problem invoking the wisdom of the Post Office Café as pie is being served today.

I don’t think most people really want to eat a quarter of a Lemon Meringue Pie, but this tart and sweet delicacy will certainly have you coming back for more.
