Apple Peanut Butter Pie
Apple Peanut Butter Pie!
One year it was the yummy combination of apples and peanut butter.
It seemed to go over well with the "judges," so here it is.
9" unbaked pie crust
About 8 cups apples
1/2 cup sugar
1/2 tsp cinnamon
1/4 cup flour
Topping
1/2 cup oatmeal
1/4 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
dash of salt
1/4 cup butter
1/2 cup peanut butter
Preheat the oven to 400°F.
Peel, core, and slice the apples. Mix the sugar, cinnamon, and flour and add to apples. Stir to mix and let sit for 10-15 minutes.
Mix oatmeal, brown sugar, flour, cinnamon, and salt. Melt butter and peanut butter and stir to blend. Add to dry ingredients and blend thoroughly.
Pile the apples in the pie crust, heaping them higher in the middle. Spread the topping evenly over. Bake for 35-45 minutes. Apples should be bubbling and topping lightly browned.
Tips from Jane
• I used a combination of several different kinds of apples and it gave a nice full flavor to the pie.
• One medium to large apple will give you about a cup of apple slices.
• I used chunky peanut butter because I like the texture, but smooth would be fine too. It's just a question of your preference.
• Since I like to fill my pies with lots of fruit, sometimes they spill over. To protect your oven, place an old baking sheet or some aluminum foil on the bottom rack of the oven.
